Ingredients vickys simple prawn pesto pasta gluten dairy egg soy free
400 grams dried spaghetti or other pasta of choice (check label for gf ef)
200 grams Vickys Pesto recipe from my profile
250 grams cooked & peeled prawns
70 grams rinsed rocket/arugula leaves
1 squeeze of lemon

Cook the pasta in boiling salted water as per the pack instructions, then drain
Add the pesto and stir to coat the pasta well
Add the prawns, rocket and lemon juice and heat through for a minute to wilt the rocket and warm the prawns
Serve immediately
