Ingredients matar pulao kheera pyaz raitagreen peas pulao wid cucumber onion raita
rice
3/4 inch cinamon stick
2 cloves
5 whole black pepper seeds
2 whole green cardomom
1/2 tsp coriander seeds
2 bay leaves
1 cup basmati rice
1/2 cup blanched green peas
1 medium onion(thinly sliced)
1 medium green chilli
1 a few cashew nuts(optional as desired)
1 tsp cumin seeds
1 tbsp vegetable oil
1 salt to taste
1 1/2 cup water
raita
1 cup Indian curd or any plain unsweetend yogurt
1 small green chilli(chopped)
1 medium onion(chopped)
1 medium cucumber(chopped)
1/2 tsp cumin powder
1 salt to taste
1 water as required
1/2 bunch chopped coriander leaves(for garnish)

for rice
take a small clean piece of muslin cloth.put the 1st 5 ingredients on the cloth & tie it up to form a small bundle
wash the rice thoroughly & drain
add the rice, water, cloth bundle and bay leaves in a pressure cooker and cook the rice for 2 whistles OR add the rice, water(adjust amount), cloth bundle and bay leaves to a saucepan & cook the rice(dont over cook,grains should remain separate & not stick)
after pressure cooker releases pressure or after the rice is cooked spread the rice on a plate so as not to form lumps!!!
now in a frying pan heat the oil and add the cumin seeds
when the cumin seeds begin to crackle add the sliced green chilli & sliced onion
when the onion starts to colour add the cashew nuts and saute till onion turns golden brown
now add the peas, salt and rice and mix thoroughly heating the rice without cookin it further!!!garnish it with most of the coriander leaves and serve wid raita
for raita
beat the curd adding water to dilute it to desired consistency
add all other ingredients to the curd and mix thoroughly!!!garnish it with the rest of the coriander leaves and serve!!!
