Ingredients loaded potato salad


2 lb Potatoes diced
2 tbsp Cooking Oil
Dressing
1/2 cup Sour Cream
1/4 cup Mayonnaise
2 each Green Onions chopped
1 tsp Salt
1 tsp Black Pepper
1/2 cup Cheddar Cheese shredded
1/2 cup Bacon crumbled

how to make loaded potato salad


Dice potatoes, toss with cooking oil. Then place them on a sheet pan and place in a 350°F oven until tender. (30-40 minutes)


Remove potatoes from oven and allow to cool completely.


To make the dressing:


Combine sour cream, mayonnaise, green onions, salt and pepper. Then whisk thoroughly to combine.


Fold cheese and crumbled bacon into the dressing.


Place cooled potatoes and completed dressing in a bowl and gently combine.
